Introduction

As we move to live in distant countries, we start losing the art of fine dining of our origins, as it happens in many cases with our languages.

In a world characterized by speed and carbohydrates, the famous hamburger has become a great symbol of practicality and the health clubs the symbol of health. For those who live from appearances and superficiality, the art of good eating has become a diet obsession and the indifference or lack of knowledge of many young people have made them overlook the pleasures of good eating. Thousands of years of culinary culture are being replaced by highly technical food production.

This is causing the disappearance at our modern food table of delicious dishes and recipes that end up being replaced by a chemical simulation of meals.

Since man began to prepare meals thousands of years ago, he has developed amazing taste and through the centuries has preserved the memory of great dishes that are repeated and refined in each generation

In this book I have compiled some of these recipes from Puerto Rico and The Caribbean, specifically several rice recipes, that are part of these memories and should accompany the great moments of our lives.

Chinese Rice

In Puerto Rico and The Caribbean, rice is used in a wide variety of dishes. This is why in our homes’ pantry you can always find this popular and useful grain. The best of it is that in the culinary art there are one and a thousand ways to cook it, and each recipe has a different taste. Below you will find a recipe for chinese rice that we have adapted here in the Island, and this is the one we use to make it. It is easy and very simple. You can serve this rice with your favorite fillet cut or just enjoy it alone. Your family and friends will love this recipe.

Ingredients:

3 cups of cooked white rice
½ cup of medium-sized shrimp clean
2 pork chops without bone, seasoned and chopped into cubes
1 chicken breast fillet, seasoned and chopped into cubes
Cooked ham (about 6 slices)
½ cup chopped scallions
3 chopped cloves of garlic
½ chopped onion
½ chopped red pepper
½ chopped green pepper
4 scrambled eggs
½ can of peas and carrots
Olive oil
Soy sauce

Procedure:

Cook the meat first; this is the most important part, each steak and seafood has to be cooked separately.
Stir-fry with a little olive oil and a little minced garlic.
You can stir-fry the ham with the pork chops.
After cooking the meat and shrimp separately, place them in individual plates.
Pour into a large skillet a splash of olive oil and turn over medium heat.
Put in the frying pan the peas and carrots, the garlic cloves ground, onion, pepper and scallion.
Cook for 5 to 8 minutes.
Pour into the frying pan (with the ingredients of the previous step) the cooked rice and stir for a few minutes.
When you finish mixing, pour 3 tablespoons of soy sauce (or to taste).
Now add to the rice the pork chops, chicken and shrimp.
Finally, add the scrambled eggs and mix well with the rice.
Simmer for 3 to 4 minutes.
Enjoy your meal!

Congri Rice

The combination of rice with black beans and the spices you will find in this recipe make it delicious and requested by those people who taste it. You can add to this basic recipe pork rinds, chicken or ham. This variant incorporates a very special taste to the rice. You won’t regret to make this recipe for your family and guests at any time of the Year.

Ingredients:

¼ cup of olive oil
2 cups onion chopped
1 cup green peppers chopped
½ cup red peppers chopped (morrones)
2 teaspoons crushed garlic
2 cups medium or long grain rice
4 cups cooked black beans
1 teaspoon cumin powder
2 ½ cups water
1 bay leaf (laurel)
Small pieces of meat: pork rinds, chicken or ham (optional)
Salt to taste

Procedure:

In a pot or saucepan, heat the olive oil on medium heat.
Add the onion, peppers and garlic.
Add small pieces of your favorite meat (optional).
Stir-fry for 5 to 8 minutes.
Add the rest of the ingredients.
Season with salt to taste.
Allow to boil for 5 minutes.
When the rice absorbs almost all the water, stir, cover with lid and place on low heat.
Continue to simmer until rice softens, stirring at least 2 times while rice is cooking, for about 25 to 30 minutes.
Serve with your favorite complements.
